Day 4: I Scream, You Scream, We All Scream for…Salad?

You thought I was going to say ice cream…too bad I’m lactose intolerant.

I’m usually pretty boring when it comes to lunch. I eat leftovers or skip it as a meal altogether; usually opting for a juice or a smoothie. Today I wanted something different, so I do what I always do when I’m in the mood to cook…I browse Pinterest until I find something appetizing that I have all the ingredients for. Well today I stumbled across the holy grail of health food.

Warm Kale Salad with Bacon, Dates, Almonds, Shallots and Parmesan

This recipe comes from Iowa Girl Eats and it is AMAZING!!!! I highly recommend you click on the link and look at her explanation because all of her pictures are beautiful, and I like her witty commentary along with her instructions.

This is by far the best healthy recipe I have come across, and everyone should try it even if you don’t have every single ingredient on hand. I used regular almonds in place of Marcona, caramelized onions instead of shallots,  and Applegate Farms Maple Chicken Sausage in place of bacon because we didn’t have any, and it still tasted fabulous.


I could add dates to just about anything. With just the right amount of sweetness and lots of fiber, they have become a staple in my pantry for late night dessert cravings and salad toppings alike. One of my favorite sweet tooth remedies is cutting a few dates in half, spreading with your favorite nut butter, and adding a sprinkle of granola or a pecan. This tastes like a dessert but with ZERO GUILT, and since it’s packed full of protein and fiber it actually does the job so you don’t have the urge to reach for the Thin Mints 10 minutes later.

It was pretty rainy out today. I’ve never been a fan of rain. I hate the way it makes my hair frizz (curly hair problems). I hate the way it makes you feel groggy all day no matter how many cups of coffee you drink. I hate the way rain boots look and the way rain coats feel. That being said, rain also forces you to come up with new ideas and be more resourceful if you’re not brave enough to go out in it. Needless to say, I didn’t get to run outside like I had planned for in my training for this week. Instead, I opted for my old faithful 15x15x15 cardio workout. 15 minutes on the treadmill, 15 minutes on the elliptical, and 15 minutes on the stairclimber. While it doesn’t seem like much, when you add up all the calories it’s a lot!

Dinner was baked chicken and roasted root vegetables (butternut squash, parsnips, and sweet potatoes). I actually got the idea for this dinner off of a clean eating meal plan a few months ago and had never had parsnips before. They are surprisingly delicious when seasoned the right way, and I have pinned a few more recipes including them that I’d like to try. Discovering new health foods has been one of my favorite parts of this journey so far. Finding new recipes and new foods that I like opens up so many doors, because no one wants to eat healthy if it’s boring! I seasoned these veggies with cinnamon, nutmeg, cloves, oregano, and a few sprigs of fresh thyme. Honestly I am a very random seasoner. I sort of throw stuff on until it tastes good…so far it’s worked out.

With everything that has been going on in my life recently it was easy to just hide away and feel sorry for myself. After getting together with a dear friend of mine, I’ve really begun to look at things in a more positive way. I’ve started to reconnect with things that were once important to me but I had neglected, and I’m really looking forward to seeing what God has planned for me over this next year. So I leave you with this:
