I started this blog in order to learn more about health, fitness, and myself. This last month has been one of the hardest in my life, so I decided to make some changes and document the progress. I was recently inspired by a fellow blogger Jaclyn Konefal who blogged about training for her first half marathon and trying out the Paleo Diet. I am essentially doing the same, but I hope to continue after finishing my half marathon and since I am studying nutrition sciences and dietetics I plan to delve a little deeper into nutrition and food sourcing issues. I work with an organization called Campus Kitchen and we work to end hunger by finding sustainable resources and helping communities help themselves. This organization has grown my passion for nutrition and concern about food sourcing issues. The fact that we grow all our own vegetables is inspiring and I love the fact that we are not only ending hunger, we are educating and nourishing these hungry citizens. I also LOVE cooking, so I don’t mind cooking meals for others once a week.
So about that half marathon…
I’ll be running the Asheville Half Marathon on June 7, 2014, so I have approximately 13 weeks to train and get my diet in check. Right now I plan on sticking to halfmarathons.net’s 12 week training plan:
On my off days I’ll be doing weight training, specifically Les Mills BodyPump Classes and various other weights circuits I find on Pinterest. Today I will be going to BodyPump class because I ran 7 miles yesterday!
As far as diet, I’m not necessarily 100% Paleo. I do however, like to play around creating paleo meals and have made a new paleo dinner every night for the past few weeks (I’ll be sure to post recipes). Unfortunately, I like cheese in my eggs, I like carbs, and I like sweets, but I’ve been experimenting with tons of healthy alternatives to all of these guilty pleasures. So far my favorite has been Paleo Chocolate Chip Cookies!
They include: 1 cup almond meal, 1/8 tsp salt, 1/8 tsp baking soda, 3 tbsp melted coconut oil, 2 tbsp honey, 1 tsp vanilla extract, 1 tbsp almond milk, a handful of dark chocolate chips
Cook at 350 for 10 minutes and enjoy!
